1/4 c fat free half and half
2-4 tablespoons of milk (start with small amount and add as needed to moisten batter but avoiding a runny texture)
2 tsp vanilla
3/4 c blueberries, frozen but defrosted in microwave
6 frozen strawberries defrosted and diced, SAVE JUICE!
red food dye-optional but makes muffins yummier looking.

Here is how you make berry pink high protein muffins:

Preheat your oven to 400 degrees. Prepare a muffin tin with 10 paper or foil liners, and spray with non-stick spray.In a medium mixing bowl, combine flour, sweetener, baking powder, salt, and protein powder. Add cinnamon to your personal preference, or omit it. Sift the ingredients until completely combined. In another medium mixing bowl, combine an egg, half and half, milk, vanilla, and red food dye if using. Whisk together. Form a pit in the center of the flour mixture, and pour the wet ingredients in it. Mix just until all ingredients are combined. Add fruit, with a little of the leftover juices if using frozen. Mix together throughly. Divide evenly among the 10 prepared muffin liners. Put in oven and bake for 15-20 minutes (20 worked perfectly for me, but keep an eye on them-no one likes a dry muffin.) Toothpick inserted should come out clean and tops should be slightly golden. After cooling slightly, brush tops of muffins with sugar free maple syrup (Optional but adds to the yumminess ALOT).
