4 Tsp. Fiber Powder
1 1/2 tsp. cinnamon
1/2 cup SPLENDA® Granular sweetener
4 1/2 scoops protein powder, vanilla
1/2 cup unsweetened applesauce
3/4 cup nonfat, skim milk
4 egg whites
1/4 cup canola oil
2 cups fresh shredded carrots

Here is how you make Enriched Carrot Muffins:

Makes 12 muffins. 1. Preheat oven to 370 degrees F2. Lightly coat muffin pan with cooking spray. 3. In a large mixing bowl, mix together flour, baking soda, and cinnamon; then add the sugar substitute, fiber powder, and protein powder. 4. Stir to combine. In another bowl, combine applesauce, milk, egg whites and oil. 5. Pour applesauce mixture into flour mixture. 6. Stir until all ingredients are moistened. 7. Then gently fold in carrots until evenly combined. 8. Spoon batter into muffin pan until each cup is almost full. 9.
