Here is how you make Egg Florentine Muffins:

Preheat oven to 200C/400FFry up the sausage, breaking it up as you go. Drain off the fat then add the chopped up mushrooms and fry lightly.Boil the spinach or the chard and then drain thoroughly. Chop it up and distribute it among the muffin pan. Distribute the spinach and sausage mixture on top of the spinach. Sprinkle the cheese on top of the sausage. Beat the eggs well and pour into the muffins, covering the previous ingredients. Place into hot oven and bake for 15-20 minutes. Once cooled, wrap these up individually in plastic and freeze. They can then be microwaved from frozen as needed for a very fast breakfast when you are on the run.
