1/2 cup brown sugar
4 tbsp sunflower oil
juice of 1 lemon
rind of 1 lemon
1/2 cup low fat milk
1/2 cup oat bran
1/2 cup oats
1/2 cup chocolate chips
1/2 cup shredded coconut
1tsp baking powder
1/2 tsp baking soda

Here is how you make Lemon and Coconut Oat Muffins:

mix eggs and brown sugar then add oil and mix. Add lemon juice, rind and milk and mix. Then add oats, oat bran, chocolate chips, coconut and sieve both flours and the baking powder and soda. Mix thoroughly and share between 12 muffin cases and put in the oven at 170C (not sure what that is in farenheit) for 22 minutes (mine is a fan oven so if you don't have one you may need a few more minutes).These are great for breakfast or for mid-morning snack.
