Here is how you make Low Fat/Sugar-Free Pumpkin Raisin Muffins:

Mix dry ingredients and set aside. Beat eggs and vanilla, add pumpkin, mix, add dry ingredients and mix well. Stir in carrots and raisins. Stir in flax seed if using. Spray muffin tin with cooking spray - if using paper liners, spray those as well. Divide evenly into twelve muffins. Bake at 350 degrees for 20 - 25 minutes. Enjoy!
