1 teaspoon baking soda

1 cup canned pumpkin puree
2/3 cup lowfat buttermilk
1/3 cup unsweetened applesauce
3 egg whites
1/2 cup chopped walnuts w/chopped walnuts to garnish

Here is how you make Pumpkin-Nut Muffins:

Preheat oven to 400 deg. Lightly coat 12 cup muffin pan with nonstick spray. In large bowl, mix together first 7 dry ingredients. Make a well in the center of the bowl.Mix remaining wet ingredients in smaller bowl. Add wet mixture into dry mixture and stir just until batter is moistened. Fold in 1/2 cup chopped walnuts.Divide batter into prepared muffin cups. Add remaining chopped walnuts for garnish if desired.Bake for 17 to 20 minutes until toothpick inserted into center of muffin comes out clean. Cool in the pan on rack for 5 minutes.
