1 tablespoon horseradish mustard
pinch cayenne pepper
1 tablespoon olive oil mayonnaise

1/2 loaf (5 oz) whole wheat or multigrain baguette, sliced 1 inch thick and toasted
12 (31/31 count) shrimp, peeled and deveined
2 teaspoons salad oil
1 teaspoon Chef meg's Creole spice blend or low salt cajon seasoning
1 cup rocket or argula greens or baby mache, washed and dried

Here is how you make Chef Meg's Rocket Shrimp:

Prepare sauce by placing all the ingredients except the mayonnaise into a food processor or basin of an immersion blender. Blend until pureed. Stir in mayonnaise.Place a flat bottomed wok or medium size saute pan over moderate to high heat. Add oil and spice blend. Once hot add shrimp to stir fry. Cook 1-2 minutes until shrimp are no longer transparent and become opaque in color. Remove shrimp from heat and place onto a cutting board. Slice each shrimp in half 3/4's the way- leave tail hinged. Spread a generous teasoon of sauce ontop of each bread slice. Fan out 3-4 pieces of lettuce .
