I was looking for another use for my strawberry protein powder. Originally I intended these to be like ice cream sandwiches, but once it blended up there was no way to keep it on the cracker. So it became layers instead. The graham crackers get a little softer in once layered with the mix. I'm going to keep tweaking this recipe to get more protein in it so it balances better.
