2 T oil
2 c chopped onions
4 minced garlic cloves
1 1/2 tsp salt
1/2 tsp pepper
1/4 tsp cayenne
3 c water
4 c peeled, seeded, cubed butternut squash (3 lb)
3 c corn
3 c beans (pinto, white--2 cans)
1/2 c chopped fresh basil


How Do I Make Bean and Squash Stew?

Here is how you make Bean and Squash Stew:

Heat oil in soup pot. add onions, garlic, salt, pepper, cayenne. Saute on medium for 5 minutes. Add water and squash. Cover, bring to a boil, simmer 10 min. Stir in 1 c corn and beans and basil. Cover and simmer 5-10 min more, until squash is soft. Puree 2 c of broth in blender. Add 2 c more corn. Puree until smoothe. Stir back into stew and reheat if necessary.
