Add the baking soda and cover the beans under at least an inch of water. Bring them to a boil, cover, and reduce heat to a fast simmer. After 30 minutes, remove the beans from the heat. Drain and rinse them and put them back in the pot. Add the Canadian bacon, ham hock, garlic powder, and salt, then add water to 2-3 inches above the beans. Bring to a boil, reduce heat, cover, and simmer for about three hours.
