-2 lbs russet potatoes chopped into bite size pieces(skins on)
-1 lb baby carrots cut in bit size pieces
-2 1/2 C white onions chopped in about the same size pieces as above
-2 cans Hormel Roast Beef (I find it at Walgreens and Walmart, it's not bad on fat and has not many added ingredients, either)or Brookdale from Aldi which has the same nutrition
-2 cans 99% fat free Fit and Active Chicken Broth from Aldi (has 10 cal, 0 fat, 0 carb, 3 prot for 1 C)
-salt and pepper to taste


How Do I Make Rumbamel's Very Easy Roast Beef Stew?

Here is how you make Rumbamel's Very Easy Roast Beef Stew:

Chop onions, potatoes and carrots and put in a large pot with the chicken broth. Bring to a boil, covered, over med/high heat stirring occasionally. Reduce heat to simmer and let simmer for about 5 min. until potatoes and carrots are tender with a fork (they pierce easily). Remove the cover and add the two cans of roast beef. Stir gently so as to not mash the potatoes. Let simmer for another 5-7 minutes until warm and thick, stirring once or twice. Add salt and pepper to taste.I've added grated parmesan on mine and it tastes great. *(not added in nutritional values).Makes about 6 =1 1/2 c servings.Enjoy!Number of Servings: 8Recipe submitted by SparkPeople user RUMBAMEL.
