1. Soak beans overnight in bowl of water. 2. Add 2 T olive oil to skillet over medium heat. Add onions & sauté 5 min. Remove from heat. 3. Drain beans & add to slow cooker. Add broth, onions, diced carrots & diced celery. Cover & cook 6-8 hrs. On Low. 4. Make pesto by filling large saucepan with water & bring to a boil. Add 1 t salt. Blanch basil 20 sec. Remove with slotted spoon & transfer to ice water bath for 1 min. Strain basil & dry to remove all water. 5. Add basil, grated cheese, and pistachios to food processor. While running drizzle olive oil until a paste forms. Season with salt & pepper. Refrigerate, covered, until ready to use. 6. To finish the soup, stir in tomatoes, zucchini, pepper, & salt.
