1 medium yellow or white onion, chopped
3 cloves garlic, crushed
2 tsp. ground cumin
1 tsp. dried oregano
1 tsp. cayenne pepper
1 - 4oz. can diced jalapenos
1 - 4oz. can chopped green chilies
3 - 15.5oz. cans white beans (cannellini)
2 - 14.5oz cans chicken broth
1 - 15.5oz can corn (no sugar added)
3 c. cooked chicken breast, cubed
1 c. shredded monterey jack cheese
2 tbsp. all purpose flour
1 tbsp. butter


How Do I Make Steph's White Chicken Chili?

Here is how you make Steph's White Chicken Chili:

In a large pot saute onions in oil over medium heat until tender--do not let onions brown.Add in garlic, jalapenos, chilis, cumin, oregano and cayenne. Continue to cook for 3 minutes. Add in chicken broth, chicken, beans and corn. Bring heat up to med-high until bubbly then reduce heat to low and simmer for 15 minutes.In the last few minutes of simmering, place butter in a microwaveable mug or bowl, and microwave to melt. Add flour to butter and whisk until combined. Whisk in a few tablespoons of liquid from chili until smooth and runny. Slowly stir in the butter/flour mixture into the chili pot to thicken chili. Remove chili from heat and stir in cheese until melted. Serve immediately.Alternately: Remove chili from heat and serve topped with cheese.Makes 6 servingsAlternate for thickening: Omit butter and flour from recipe. Reserve 1/2 cup beans and process in a blender or food processor then add back into chili at the end of cooking. This change reduces calories per serving to 317kcal from 344kcal and reduces fat to 8.4g from 10.3g.This chili also goes great with a dollop of sour cream on top of each bowl and served with tortilla chips.
