Bring to a boil until zucchini is cooked through. Use blender to blend small portions of about 2 cups at a time (hot liquids will explode out the top of your blender in large batches). Use a towel to cover the top of the blender and hold the lid down, just in case the liquid decides to push the lid off the blender. Pour the blended zucchini into a large bowl until you've finished blending the entire batch. Return zucchini/broth to Dutch Oven.In the meantime, saute onions and chicken together in a skillet coated with cooking spray until chicken is no longer pink. Add onions and chicken to Dutch oven.Add corn and potatoes to Dutch oven and cook until potatoes are tender. Also add seasonings you enjoy. I added: Italian seasoning, black pepper, paprika, minced garlic and red pepper flakes.Pour the milk and corn starch into a container with a tight sealing lid.
