While the butter was melting, I let the onion soak up the 1/4 cup chicken broth and added them to the pan after about 10 minutes. In a seperate pan, I quick sauteed the chicken with salt, pepper and thyme (non stick pan, little 0-calorie spray). When the onions were happy in the butter I stirred in the flour until it was smooth. Then, added the corn, potatoes and 2 cups chicken broth. When the chicken was done, I threw it all in. I brought it all up to a boil, lowered it to a simmer, and let it go for 20 minutes - covered. I added the milk, brought it back up to a boil, and it was good to go. I stirred fairly often to make sure nothing was stuck to the bottom of the pan.
