1 carrot, peeled and finely chopped
2 celery stalks, chopped
1 med. onion, peeled and chopped
3 chicken breast
2-32 oz. cans Swanson Chicken Broth, 99% Fat Free, MSG free
1 tsp. sage, ground
1/2 tsp. salt or to taste
1/2 tsp. pepper, black or to taste
1/2 pkg. of Mrs. B's (fat free) Frozen Flat Dumplings
1/4 cup cranberry sauce on the side


How Do I Make Easy Chicken and Dumplings?

Here is how you make Easy Chicken and Dumplings:

Chop carrots, onion and celery. Use large stew pot to bring chicken broth, chicken breast, vegetables, and seasonings to a boil. Stir well. Once boiling, reduce temperature to simmer. Cover and cook for 30 minutes. Remove chicken and set aside to cool. Bring broth mixture back to a boil. Add a 1/2 pkg. of frozen flat dumplings one at a time to mixture. Stir frequently so dumplings do not stick to one another. Reduce temperature to simmer. Cover and cook dumplings for 45 minutes. While dumplings are cooking, cut cooled chicken into small cubes (1/2"). When dumplings or done, remove pan from stove. Return cubed chicken to pot. Stir and let stand for 10 minutes. Walla, chicken and dumplings. If you find that you like your dumplings thicker, experiment by using 1 1/2 cans of broth. Freeze the left over broth or use when warming up left overs. Save the other 1/2 pkg. of dumpling in freezer for the next time you make C & D. Tips: Mrs. B's has regular flat dumplings too. You can find these dumplings in the frozen biscuit section. Cranberry sauce (jellied or whole) is a nice side dish served with chicken and dumplings, chicken and rice, or turkey/chicken and dressing.
