1. In a large bowl cover 2 CUPS UNCOOKED WHITE BEANS with water about 2 inches above the beans and let soak overnight or for up to six hours.2. Drain the beans and set aside.3. In a large stock pot, combined 3 CLOVES PEELED AND MINCED GARLIC; 2 LBS CHICKEN PIECES; 1 MEDIUM ONION, CHOPPED; 1 1/2 T SEA SALT; 2 t FRESHLY GROUND BLACK PEPPER, 1 BAY LEAF, and 10 CUPS WATER.4. Bring chicken, vegetables, and water to a boil.5. Reduce heat to simmer, and simmer 45 minutes.6. Remove the chicken from the pot, and let cool on a plate.7. Add the 2 CUPS SOAKED WHITE BEANS; 1 CUP DICED CELERY; 1 CUP SLICED CARROTS; 3 SPRIGS FRESH ROSEMARY; and 1 MINCED JALAPENO PEPPER (if wanted) to the stock pot. Bring to a boil.8. Meanwhile, once chicken is cool enough to handle, remove the meat from the bone and add the meat back to the pot.9. Reduce the soup to simmer and simmer for 45 minutes to an hour (or until beans are soft). 10. Remove the rosemary stems (leaves will have fallen off the stems while cooking) and the bay leaf.11.
