This is just a simple soup that can be ate alone or as a side. In the past I would pour this over a bowl of rice, but I'm opting to eliminate the rice and just enjoy the soup with veggies : ) I use the frozen vegetable gumbo mix, but you can use any veggie mix you like.

Here is how you make Chicken Gumbo:

*cook time may vary less*Bring 10 cups of water to a boil in a large pot. Wash chicken thoroughly and remove the skin.Place chicken in boiling water and allow it to cook for an hour to an hour 15 minutes.Pour the water off of the chicken, rinse the chicken off with cool water, then remove the meat from the bone.Place the meat back into the pot and add 3 to 8 cups of water. (depending on if you prefer a thicker gumbo or a juicy soup, taste great either way) Pour the bag of veggies into the pot and well as the canned stewed tomatoCover the pot and allow to boil for 30 to 45 minutes or until veggies are tender enough for your liking.
