1 packet low sodium mexican seasoning (fajita or taco)
2 15 1/2 oz cans of chili beans (I use Brooks chili hot beans)
1 14 1/2 oz can low salt stewed tomatoes, undrained
1 green bell pepper, chopped
1 onion, chopped

optional ... fat free sour cream, tobasco sauce, chopped fresh cilantro, low fat shredded cheese for toppings


How Do I Make Lean Beef Chili?

Here is how you make Lean Beef Chili:

Brown beef in hot pan (I use a dutch oven so everything fits in one pan). No oil is needed. Add mexican seasoning and a little bit of water (enough to keep seasoning from sticking to the pan .,.. not even 1/4 cup). Mix well. Allow beef to simmer in seasonings for about 5 minutes to absorb the flavor.Add remaining ingredients. Stir well. Bring to boil, reduce heat and simmer for up to an hour to combine flavors. If you like it spicy, add a pinch of cayenne pepper here.If you like, this can be placed into a slow cooker and cooked on low for 6-8 hours. Serve with optional items (not calculated into recipe) for garnishment or alone.
