One 14 oz. can chickpeas, drained and rinsed
2 medium carrots, sliced thin
1 c. organic kale, de-stemmed and torn into pieces
1 tsp. sea salt
Freshly ground pepper to taste

Saute onion and garlic in a medium stockpot sprayed with cooking spray and add remaining ingredients except kale. Bring to a boil, lower heat and simmer for 20-30 minutes. Add kale and cook for an additional 10 minutes or until kale is tender. Season to taste and serve.Serving Size:?Makes 6 1-cup servings.
