What Are The Ingredients For Easy Scallop and Clam Chowder Recipe?The ingredients for Easy Scallop and Clam Chowder are: 1 TBSP oil1 med. onion, chopped 1 TBSP garlic, minced 2 large carrots, chopped 6 med. potatoes, chopped 12 oz. scallops 1 can, clams 15 oz low fat/low salt chicken broth 1.5 C clam juice or Clamato 2 C frozen corn 1 package frozen potato/onion pierogies 1 TBSP Old Bay seasoning Balsamic vinegar to taste salt and pepper to taste How Do I Make Easy Scallop and Clam Chowder?Here is how you make Easy Scallop and Clam Chowder: Place chicken broth, water and clam juice in stock pot and heat to boil. Add chopped potatoes and carrots. Cover and simmer for 20 minutes until vegetables are tender. While the potatoes simmer, heat oil in pan and cook scallops on med-high heat for 2 min. Remove from pan and set aside. Saute onions and garlic until translucent, set aside. Remove 2 cups of potatoes/carrots from stock pot, puree in blender (or right in pot with hand blender), then place back into pot. Wisk in yogurt. Heat to boil and place pierogies into pot. Simmer for 3 min. Add onions/garlic, corn, scallops, clams, Old Bay seasoning, salt and pepper and heat through. You may want to add a dash of Balsamic vinegar or sherry (but let the soup simmer for a few minutes if you add alcohol) for a little zest.
