-1 large bulb fennel, quartered and cored, then thinly sliced
-1 onion, quartered then sliced
-a few sprigs fresh thyme and rosemary
-2 fresh bay leaves
-2 quarts chicken or vegetable stock
-1 cup ditalini pasta
-1 can cannellini beans(24-28 oz), rinsed and drained
-1 head escarole, stemmed and shredded

Here is how you make Pasta Fagioli with Roasted Garlic and Fenne:

Makes 8 1-cup servingsPre-heat the oven to 425 degrees F. Cut the end off the head of garlic and drizzle with olive oil, salt and pepper. Wrap in foil and roast until soft, about 40 minutes. Squeeze the cloves into a bowl and mash with a fork.Heat the olive oil in a soup pot over medium-high heat and add the sausage, casings removed. Brown sausage, breaking it up with a spoon as it cooks, and drain, leaving about 1 1/2 tbsps of drippings in the pot. Add fennel and onion to the pot and season with salt and pepper. Cook until soft, about 10 minutes, then add the mashed garlic, herbs, and stock. Bring to a boil (add 1 cup extra of water if you want)Once soup comes to a boil, add 1 cup ditalini pasta. Cook for about 3 mintues before adding drained beans and reserved sausage. Continue to cook until pasta is al dente, about 4-5 minutes more. Remove from heat and wilt in chopped escarole.
