Here is how you make Black-Eyed Pea Gumbo:

Heat the olive oil in a large saucepan over medium heat, and cook the onion, pepper, and celery until tender. Pour in the chicken broth. Mix in black-eyed peas with liquid, diced tomatoes and green chilies, diced tomatoes, smoked sausage, and garlic. Bring to a boil,reduce heat to low, and simmer 30 minutes. Stir in rice and continue to simmer for 15 minutes or until rice is tender. Season to taste with cajun seasoning.
