Here is how you make Quinoa Potato Corn Chowder 1 cup serving:

Six 1 cup servingsSteam broccoli stems & 1/2 cup diced potatoes until tender, set aside. Meanwhile, spray large pot with non-stick spray & add olive oil and heat over medium high heat. Add onion & bacon pieces stirring to sautee for about 3 minutes. Add quinoa and continue stirring another half minute. Add 3 1/4 cup broth (remember to save the other 3/4 cup), water, carrots, 1 cup potatoes, basil, pepper, bay leaf. Bring to a boil, then reduce heat to medium low and simmer for 15 minutes.While the soup simmers, combine remaining 3/4 cup broth with steamed broccoli & potatoes in blender. Puree until smooth.When soup has cooked 15 minutes, add corn and bring back to a boil and simmer 5 minutes. Remove bay leaf and stir in pureed mixture and milk.
