1 Large head of Cauliflower, cut into florets
1 pound Butternut Squash, peeled and chopped
1 Large Onion, chopped
2-4 cloves Garlic, minced
5 Medium Carrots, peeled and chopped
6 Stalks Celery, 3 large outer, 3 inner including all leaves
6 cups Vegetable Stock
1 Cup Red Lentils
3/4 cup of Unsweetened Soy Milk
Spices to taste-
1 tsp Cumin
1 tsp Tumeric
1 tsp Curry Powder
1 tsp Lemon Pepper
1/2 tsp Cayenne Pepper
Salt & Pepper
2 Tbsp Olive Oil


How Do I Make Butternut, Cauliflower, Lentil Soup?

Here is how you make Butternut, Cauliflower, Lentil Soup:

In a large stock saute chopped onion in 2 tbsp of olive oil, for about 5 minutes.Add the garlic and cook for 5 more minutes.Add the celery, put on lid, and cook until celery starts to soften.Add vegetable stock to pan.Add lentils, and preliminary spices, stir and allow to come to a simmer.Add cauliflower, carrots, and squash. Cover and let simmer, stirring occasionally, while the veggies cook down, approx. 20-30 min.Use an immersion blender to make soup smooth. I like a little texture so I take out a few cups, blend, and then add back the chunks. You can also use a regular blender, but you will need to do it in batches, and be careful blending hot liquids!Taste for spices, season accordingly. Stir in 3/4 cup of Unsweetened Soy Milk, you can add more or less as neccesary(but it will change the nutritional info)This makes approx 8, 1 1/2 cup servings.Number of Servings: 8Recipe submitted by SparkPeople user THAMESARINO.
