Red Lentils, 2.5 cup

Chicken Broth, one can
Sherry, .25 cup
Lemon juice, 2 tbsps

How Do I Make Gingered Red Lentil Soup?

Here is how you make Gingered Red Lentil Soup:

Oil spray a large stock pot and heat over medium heat. Put in ginger, onions, and garlic with a little of the broth to keep from sticking. Saute until onion is tender, about 4 minutes. Add in potatoes, carrots, lentils, water, and remaining broth. Heat to boiling. Turn heat down and partially cover. Simmer for 45 minutes or until lentils are very tender. Cool slightly. Puree with immersible blender or remover to a standing blender and then return to pot. Add in sherry, lemon juice, and seasonings to taste. Simmer for 30 minutes. Serve hot.
