How Do I Make Nancy's Lentil Soup?

Here is how you make Nancy's Lentil Soup:

Cook bacon in dutch oven, remove and place on paper towels to drain. In remaining bacon grease, add carrots, onions, celery, and garlic and saute until veggies are tender. Stir in bacon, 4 C. water, lentils, bouillon cube, parsley, salt, pepper, thyme, and bay leaf. Heat to boiling. Cover and reduce heat and simmer until soup thickens, about 1 hour. Stir in tomatoes with liquid and 1 C. water. Simmer uncovered for 15 minutes. Makes 6 - 1.5 C. servings. Number of Servings: 6Recipe submitted by SparkPeople user NANCYPENNY.
