In a large pot (biggest one you have), heat coconut oil until melted. Saute the shallots and the leeks with a little salt until they're softened. Then, add everything BUT the coconut milk - ensuring that liquid covers everything (if your squash is particularly large, you may need to add more broth or water, no biggie). Bring it all to a boil, then lower to a simmer and cook about 25 minutes - you'lll know it's done when a squash cube easily smooshes with a wooden spoon. Add the coconut milk, then use a blender to puree the whole thing.
