I came up with this recipe, because after a crawfish boil that I hosted, I had some leftover crawfish tails, corn and potatoes. If you are using leftovers from a crawfish boil as I did, you probably won't need the extra spice. (I still added it because I like it spicy!) How Do I Make Kickin' Cajun Stew?Here is how you make Kickin' Cajun Stew: Add olive oil to a pot. Add celery, onion, bell pepper, garlic and seasonings. Saute until cooked. Add cornstarch, stir so vegetable mix is evenly coated. Add chicken broth and bring to a boil.Once boiling, add potatoes, corn, crawfish and water. Bring to a boil. Once boiling, reduce heat and cover. Let simmer for 5 minutes.
