Sauteed the following:
Thinly chop 5 stalks of celery w/ leaves
1/2 onion, large
baby carrots (handful or as many as desired)
thinly sliced 1 potato ( more if you feel like it)
minced garlic, salt, pepper (dash of each) and saute in large deep pan. I used EVOO (about 2 tbs)

Then add in chopped chicken breast (i did about 3 frozen tenders)
Add 1 can of fire roasted diced tomatoes
chili flakes, dill, and 3 tbs of thai red curry, 1/4 cup of sugar. more salt/pepper to taste. Garlic chili sauce or Sriracha sauce.

I add in 4-6 cups of water or a mixture of low sodium chicken broth
i topped salad w/ fresh, thin sliced onions and basil and cilantro.
