3 tsp. Low sodium chicken stock granules or to taste
4 Cups rinsed Lentils
1 TBS Olive Oil
1 package of Turkey Smoked Sausage cut into 1/2 inch rounds or 1 lb ground turkey
3 Garlic Cloves
3 carrots chopped (1cup)
3 celery stalks chopped (1 cup)
1 medium Onion chopped (1 cup)
2 TBS each of ground Thyme and Rosemary or to taste
1 TBS ground black pepper
about 8 cups fresh spinach or whole bag of ready to eat (chopped)

Here is how you make Hearty Lentil Stew:

In a large skillet add olive oil, garlic, onions, carrots, celery and meat and saute till veggies are just tender but firm.In a large pot add water herbs and spices and stock granules heat to just boiling add lentils and veggies. Turn down heat and simmer for about 20 minutes until lentils are tender adding more water as needed. Stir in spinach and cook for 5 minutes more.Serve with a slice of crusty bread. Yum.
