What Are The Ingredients For Green Vegetable Minestrone Recipe?The ingredients for Green Vegetable Minestrone are: 3 Tbls. extra virgin olive oil (I used 1.5 Tbls.)2 small leeks - white & light green parts only, quartered, washed and sliced 3 small stalks celery - chopped 1 large onion - chopped 1 1/2 tsp. salt (I did not add the salt) 2 small zucchini - quartered lengthwise and sliced 1 medium potato - peeled and diced 3 cloves garlic - minced 8 cups water (I used 6 cups water and 2 cups low sodium, low fat chicken broth) 1 cup whole wheat short pasta (such as elbow, bowtie or shells) 8 cups chopped green chard leaves (I used red chard and used 10 cups) 1 15 oz. can chickpeas - rinsed 1 cup frozen peas Freshly ground pepper to taste 1/2 cup freshly grated Parmesan cheese (optional) How Do I Make Green Vegetable Minestrone?Here is how you make Green Vegetable Minestrone: Heat oil over medium heat. Add leeks, celery, onion and salt. Cook stirring until softened (7 - 10 minutes). Add zucchini, potato and garlic. Cook stirring 1 - 2 minutes. Add water. Bring to a boil. Reduce heat to low and simmer, partially covered until vegetables are tender (12 - 15 minutes)Add pasta and chard. Cook uncovered for 5 minutes. Add chickpeas and peas. Simmer until the pasta is just tender (3 - 4 minutes). Season with pepper.
