One evening over "take out" form Whole Foods, I was thinking how great the watermelon might taste with the spicy flavors of the salsa I'd had with chips. I had some very little time and energy the other night, and some food that needed to be used up before vacation, and "voila!" Best of all, it keeps well in the fridge, so I could take the leftovers for lunch!

Here is how you make Quick and Dirty Watermelon Gazpacho:

Set aside a couple of watermelon chunks for garnish. Add remaining watermelon chunks to food processor. Run blade for about 3 seconds, until chunks are no longer identifiable, but well before the watermelon becomes all liquid. Add salsa fresca to food processor and blend for another 2-3 seconds - again, avoiding any "liquidification" of the watermelon. Keep refridgerated until served, overnight or up to 3 days. Garnish with retained watermelon, thinly sliced cucumber, or wedges of citrus fruit . Serve alone or as a side dish. Cornbread and taco chips both work well with this, too. Serve and enjoy!
