This is a vegetarian main dish. It has a lovely rich flavour that would make it a good candidate for Thanskgiving. A galette is a roughly formed free-form pie. This recipe uses a yeasted dough, similar to a pizza dough,so you could use that instead of making it from scratch.This recipe is adapted from Deborah Madison's Vegetarian Cooking for everyone. I used half of her yeasted galette dough recipe, reduced the fat from 4 tablespoons to 1 and omitted the horseradish sauce.

Here is how you make Mushroom Cabbage Galette:

Make the dough and let rise for one hour while you make the filling.Finely chop the onions and garlic, slice the mushrooms, and chop the cabbage.Saute the onions for 2 minutes, add the mushrooms and garlic, and saute for 10 minutes.Add the chopped cabbage and water, cover and simmer for 10 minutes.Uncover and tun the heat up to evaporate off the water until it has mostly disappeared.Add the chopped boiled egg, yogurt or quark, and vinegar.Roll the dough out into a rough circle, anywhere from 9-11 inches in diameter, and place on a baking sheet.Spread into the middel of a rolled out galette (or pizza) dough.
