We got this from the Garvin County Extension office, Paul's Valley, OK "The Nineties Cookbook" and it's been our traditional go-to. I was curious to see the calorie breakdown, and I typically use the Bruce's brand (can't remember if it's yams or sweet potatoes. I also tend to use the kosher/halal brand of marshmallows - they just seem to "work" better, taste better. I tend to smash my peaches all up and blend them in lightly so it's more like a souffle rather than chunks of veggies (and have been known to add raisins or pineapple chunks in it as well.). It could be called "vegetarian" if one leaves off the marshmallows or finds a vegan version?

1/3 c. packed brown sugar (I use less, maybe 1/4 cup)
3 Tbsp flour
1/2 tsp nutmeg (but I've used cinnamon, allspice etc)
2 Tbsp butter or margarine (I've also used coconut oil)
1/3 c. chopped pecans (this is sacred!)
2 - 17oz cans yams, drained (or sweet potatoes) * (these days more likely 15 oz can, so deal with it.).
1 - 16 oz can sliced peaches, drained
1.5 c. miniature marshmallows (can use larger and chop up)


How Do I Make Southern Peach Yambake?

Here is how you make Southern Peach Yambake:

Combine brown sugar, flour, and nutmeg (or other preferred spices); mix well. Cut in butter until crumbly. Stir in pecans. Arrange yams and peaches in 1 1/2 quart casserole dish; sprinkle with brown sugar mixture. Bake at 350 degrees F for 35 minutes. Sprinkle with marshmallows. Broil until lightly browned.
