Here is how you make Winter Roasted Veggies:

Preheat oven to 400 degrees. Prep veggies and add to casserole dish large enough to hold all ingredients in a single layer. Drizzle with olive oil enough to coat veggies, but not so much it pools in the bottom of the dish. Toss with hands to ensure even coating. Sprinkle on top the herbs and kosher salt.
