Here is how you make After Thanksgiving Turkey Rice Soup:

Boil or pressure cook turkey carcass, remove from stock, reserve meat and stock, discard bones. Add meat from bones and enough leftover turkey to make 3 cups. Add diced vegetables and brown rice. Bring to boil and simmer until rice is cooked, at least one hour. Season to taste.
