Add curry powder and 1 tsp ginger garlic paste to the peppers. Add 1/2 tsp salt and cover. Cook until peppers are soft. Can add little water if need to reduce oil in the dish. It helps soften the peppers. Next add diced potatoes and mix well. Add more salt if needed.
