Saute the onion and curry powder in a healthy splash of apple cider vinegar, about 4 minutes. Add the potatoes, spinach, carrots, vegetable broth, and about half of the soymilk. Simmer covered until the potatoes are cooked. Uncover and add peas, cayenne pepper, and the remaining soymilk (you can use less if you want), simmer 5 minutes. Stir in cilantro and serve immediately.
