2 T vegetable oil
1 garlic clove, minced
1 stalk broccoli, peeled and diced (abt 1 cup)
1 c sliced mushrooms
1 med red or green pepper, finely sliced
4 large eggs
1 tsp soy sauce
1 tsp grated fresh ginger root
1/2 c water or veg. stock
1 T soy sauce
1 T sherry or rice wine
1/4 tsp dark sesame oil
1 scallion, finely chopped (2 T)
2 tsp cornstarch
2 tsp cool water


How Do I Make Asian Frittata?

Here is how you make Asian Frittata:

Saute onions in oil over med. heat for 3-4 mins. Stir in garlic and brocolli and saute 3-4 mins more. Add mushrooms and peppers. Whisk eggs with soy sauce and ginger. When vegetables are crisp-tender, pour eggs over them and cook on low heat, covered, until set, abt 6 mins. Meanwhile, make the sauce. Bring 1/2 c water, soy sauce, sherry, oil, and scallions to boil. Dissolve corn starch in cool water and stir into simmering sauce. Stir until sauce thickens and remove from the heat.
