Here is how you make Baba Ghanouj:

Slice the eggplant into 1/2 inch slices and roast in the oven for 1 hour, turning halfway. Eggplant will stick less to pan if you spray it with a little pam first. I don't peel the eggplant because I like the extra fiber that comes with the peel (and I can't taste it), but feel free to peel if desired. Once roasted and cooled, combine it with all of the other ingredients in a food processor and pulse for 1-2 minutes.
