Reserve about 1/4c. pasta water after draining cooked pasta. Sautee chopped vegetables in some olive oil spray over med-hi heat in a skillet until onions are just tender. Mix drained penne, vegetables, sauce and ricotta cheese in a large bowl until coated and mixed. Spray an 8x8 glass or Corningware baking dish with a light spray of olive oil cooking spray. Pour pasta mixture into dish, spreading out evenly. Pour a little of the pasta water over the mixture to maintain moisture.
