By substituting applesauce for the eggs and some non-dairy buttery spread, I removed all animal products.

Add this mixture to the shortening/sugar mix.Blend flour and baking powder into a small bowl. Add coconut. Slowly add these dry ingredients into the liquid ingredients.Spray a 1-pound loaf pan with olive oil cooking spray (adds a negligible amount of fat) and flour the pan (keeps the bread from sticking).Bake at 325 degrees F for 1-1/4 hours.
