Then I made it again in a 10 x 15 cookie sheet, the kind with sides on, It came out perfect! My kids love it this way because they can warm them up in the toaster for breakfast and it freezes well, also. I've done this with other muffin recipes too. Try it!

Here is how you make Banana Cranberry Toaster Cakes:

Preheat oven to 350 degrees.Combine flour, baking soda, salt, orange zest, walnuts, raisins and cranberries in a large mixing bowl. In a blender puree bananas, orange juice, vanilla, oil and maple syrup; stir into mixing bowl and combine with dry ingredients. Spray a cookie sheet (with sides) with Pam, or cover with 1 tbsp of oil, pour in batter and even out. Bake in oven for 30 to 35 minutes. Test for doneness with toothpick.
