Its a completely different recipe now (original wasn't a curry) but since I modified it from a book I thought I should say so.

50 grams dried lima beans (about 1/4 cup)
1/6 large onion
2 baby carrots
1/2 a medium celery stalk
1/4 garlic clove, chopped fine
1/2 medium tomato, preferably ripe, dice and squish it
1 tbsp curry powder
pinch garam masala
1 tbsp olive oil

Here is how you make Lima Bean Curry:

Makes 1 serving.Pre soak lima beans.Cook lima beans on medium heat until they are tender but not mushy, this takes 45 minutes to an hour. Drain and preheat the oven to 350F.Cut up onion, carrot, celery, and garlic. Heat oil in a pot and cook those ingredients for 5 minutes, until the onion is somewhat clear. Add the tomatoes and a few tablespoons of hot water. Bring to a boil, and then simmer for a few minutes.Add the lima beans and curry to the pot, you may need to adjust the amount of curry depending on your tastes.Bake for approximately half an hour, until the lima beans are soft and most of the liquid has absorbed.Number of Servings: 1Recipe submitted by SparkPeople user H3LLO-.
