Here is how you make Naturally Black Bean Enchiladas:

1. Sauce: Heat up the Oil on Medium Heat. When oil is hot, add the Flour and stir. Combine the Water and Seasonings, whisk out any lumps. Simmer 45 minutes. Add more water if the mixture gets thick. Turn the heat off and allow to cool.2. While the Sauce is simmering, make the Enchilada mixture in a separate pan, cooking them for about 30 minutes. Set aside.3. Once Sauce is done, pour a thin layer of sauce into a casserole dish ? this will be the same dish in which to cook the Enchiladas. Once Sauce is warm (not hot) submerge the Tortillas into the sauce and place it in the casserole dish. 4. Put the Enchilada mixture in the Tortillas by large spoonful, spreading down the middle. Roll them seam down, placing them closely together. When finished, pour remaining Enchilada Sauce on top, spreading Sauce evenly. Bake 15 Minutes.5.
