Use pie crust to line two personal-sized pie tins. In a skillet, simmer all filling ingredients together. The black beans and corn were indulgently good, but be creative. Cool and pour into new personal pie fillings. Cover if desired-- I experimented with egg roll wrappers and it worked pretty well to tuck the wrapper inside the pie crust around the filling. Give it a quick squirt with a cooking spray and cover with foil. At this point, it can be frozen for a convenient quick dinner later or put in the oven immediately. When you cook, remember that the pie crust has egg-- don't skimp. Try 300 degrees for 15 to 30 minutes, depending on whether you froze it and how long you thawed it if you did. Uncover for the last few minutes to brown the top.
