3 large carrots, grated

1 T fresh thyme
1 t sea salt
1 t freshly ground black pepper
1/2 C chopped fresh cilantro
1 x 15 oz cn lima beans
1 x 15 oz can kidney beans
1x15 oz can pinto beans
1 x15 oz can black beans
1 x15 oz can cannellini beans, draned and rinsed
2C water
2T rice vinegar
1 T honey
1 T Dijon mustard
4 T chopped fresh parsley, divided
Juice of one fresh lime

Here is how you make Five Bean Stew:

Saute onion in olive oil in a large pot over medium-heat for about 5 minutes. Add garlic and saute for about 5 minutes more. Add carrots and leek, and cook until softened. Add thyme, sea salt and black pepper and cook for a minute or so.Add the beans-drain and rinse only the cannelli beans. Add vinegar, honey, mustard, water, cilantro and half of the parsley. Bring to a boil and reduce to a simmer over low heat. Cook, loosely covered so steam can escape for 2 hours. Stir every so often.Remove from the heat. Add lime juice and the rest of the parsley.
