Spray a saucepan with olive oil cooking spray and add 1/2 of the jerk spice. Heat until the pan is hot, then add strained tomatoes. Strain and rinse the black beans, then add to the pan. Add the remainder of the jerk spice and cook until liquid is almost gone. Add 1/6 of bean mixture to each tortilla, then add a portion of peppers and spinach and top with 1/6 of the cheese.
