2 c. chopped Chinese cabbage
3 stalks celery, diced (stalks = 7" each)
1/2 c. baby bella mushrooms, chopped
1/3 c. chopped sweet onion
1/4 c. diced pickled banana peppers
1 15 oz. can Great Northern beans (rinsed)
1/2 c. quinoa flakes
1 t. minced garlic (Spice World)
1/4 t. red pepper flakes
2 t. tahini sauce (I use Trader Joe's blend)
1 T. extra virgin olive oil


How Do I Make Great Northern Bean Veggie Patties?

Here is how you make Great Northern Bean Veggie Patties:

Preheat oven to 350 degrees. Line a rimmed baking sheet with parchment paper or spray with olive oil. Finely chop cabbage, celery, mushrooms and onions. Heat 1 T. olive oil in skillet and saute the vegetables over medium heat for about 10 minutes. Add garlic and pepper flakes to vegetables. Set aside. In separate bowl place beans, tahini sauce, and pickled peppers. Blend or mash together until dough-like. Add sauteed vegetables and stir together. Mix in quinoa flakes until fairly stiff dough. Take 1/2 cup of mixture and form a patty. Place on parchment paper. Do the same with remaining mix -- it should make a total of 4 patties. Place baking sheet in preheated oven. Set timer for 12 minutes. Turn patties over and return to oven.
